- 1/4 c. cut up lean salt pork
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 1/2 to 2 c. okra, cut into 1/2-inch pieces
- 1 c. corn, cut from cob
- 3 to 4 tomatoes, peeled and cut into 1/8-inch pieces
Directions

1Cook salt pork, onion and green pepper in skillet until pork is golden.

2Stir in okra; cook over medium high heat, stirring constantly, for 3 minutes.

3Stir in corn and tomatoes.

4Cover and simmer until corn is tender, 10 to 15 minutes.

5Yield 4 servings.
