- 6 slices bacon
- 2 lbs potatoes
- 3 tbsp vegetable oil
- 1/2 tsp garlic salt
- 1/8 tsp black pepper
- 1/4 cup barbecue sauce (any flavor)
- 1 cup shredded colby jack cheese
- 4 tsp dried parsley
Directions

1Bake bacon in 400 degree oven for 22 minutes, until brown & crisp.

2Drain well.

3Crumble.

4Increase oven temperature to 450 degrees.

5Cut potatoes into 1/4 inch slices.

6Put in bowl or gallon ziploc bag.

7Add oil, garlic salt, & pepper.

8Stir or shake until well coated.

9Arrange potatoes in single layer on baking sheets.

10Bake for 20 minutes or until lightly browned.

11Brush with barbecue sauce.

12Mix bacon, cheese, & parsley in bowl.

13Add some of mixture on top of each slice.

14Bake until cheese melts, about 5 minutes.

15Then serve.
