- 2 c. boiling water
- 1 c. cracked wheat
- 1/4 c. canola oil
- 1/4 c. lemon juice
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 c. fresh, chopped parsley
- 1/2 c. chopped green onions
- 2 tomatoes, chopped
- 1 tsp. vinegar
- 1/2 c. chopped celery
- 1 medium cucumber, chopped
- 1 c. chopped, cooked beef
Directions

1Pour boiling water over cracked wheat in bowl.

2Let stand for 1 hour. Drain well into colander.

3Return to bowl.

4Add remaining ingredients; mix well.

5Chill for 2 hours or longer.

6Serve on lettuce-lined salad plates.
