Ingredients
- 4 medium-sized plum tomatoes
- 1 medium-sized onion
- 1 garlic clove
- 1/4 c. packed fresh cilantro or parsley leaves
- 1/4 c. lime juice
- 1/4 c. soy sauce
- 6 chicken pieces (your favorite)
Directions

1Coarsely cut up tomatoes and onion.

2In blender at medium speed or in food processor with knife blade attached, blend tomatoes, onion, garlic, cilantro, lime juice and soy sauce until tomatoes and onion are finely chopped.

3Place chicken and sauce in a large Ziploc bag and seal, turning chicken to coat well with marinade.

4Refrigerate at least 4 hours.

5Prepare outdoor grill for barbecuing.

6Place chicken on grill over medium heat, reserving marinade.

7Cook until golden on both sides, about 10 minutes.

8Cook until fork-tender, brushing occasionally with tomato marinade.

9Makes 6 servings.
