Soy Fried Rice

  • 2 Tbsp. cooking oil
  • 3 eggs, beaten
  • 1 bunch green onions and tops, sliced
  • 1 (14 oz.) box Minute rice, cooked as directed or 1 c. regular rice, cooked and drained
  • 2 Tbsp. soy sauce

Directions

    Heat oil; add eggs, mixing constantly, while breaking up with fork.

    Add eggs and onions to rice with soy sauce to color rice brown.
  3. 3
    Blend very well and serve hot.

    (Can reheat in oven at 350° for 30 minutes.)

    If desired, stir in 1 cup cooked, diced shrimp or 1 cup cooked, diced pork tenderloin.
