- 5 slices bacon
- 2 l large onions sliced thin
- 2 cloves garlic
- 1/4 cup olive oil
- 1/2 pound ham steak
- 1/4 cup dry vermouth
- 3/4 cup beef broth
- 2 pieces bay leaves
- 1 cup heavy cream
- 1 cup parmesan cheese
- 1 pound spaghetti
Directions

1In large frying pan, cook bacon until done, and remove from pan. remove excess grease, leaving 2-3T in pan. Add to pan oil, butter and onions. saute about 25 minutes, until caramelized (do not cut time for this, it is key to great carbonara!). Add garlic. In large pot, boil water for pasta. Cook as directed. Back to onions, add ham and bacon. Saute for a few minutes. Add vermouth and scrape bits from pan. Add broth and bay leaves. Saute 10 minutes. Over low heat, add cream and cheese, stir.Serve sauce over pasta with extra cheese.
