- 4 Tbsp. cooking oil
- 1 (4 oz.) can mushroom slices or pieces
- 1 medium onion, chopped
- 1 c. (about 4 oz.) uncooked spaghetti
- 1 1/2 c. uncooked long or whole grain rice
- 2 cans chicken broth
- 1/4 tsp. salt
- 1/8 tsp. black pepper
Directions

1In large skillet, heat 3 tablespoons oil over medium heat. Add mushrooms and onions; saute until lightly brown.

2Remove from skillet and set aside.

3Heat remaining 1 tablespoon oil in skillet and brown spaghetti (be careful, it browns fast!).

4Remove skillet from heat and return mushrooms and onions to skillet.

5Add remaining ingredients; mix well. Bring to a boil; reduce the heat to low.

6Cover and simmer 20 minutes or until liquid is absorbed. Freezes well.
