Spaghetti Rice

Ingredients

  • 4 Tbsp. cooking oil
  • 1 (4 oz.) can mushroom slices or pieces
  • 1 medium onion, chopped
  • 1 c. (about 4 oz.) uncooked spaghetti
  • 1 1/2 c. uncooked long or whole grain rice
  • 2 cans chicken broth
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper

Directions

    In large skillet, heat 3 tablespoons oil over medium heat. Add mushrooms and onions; saute until lightly brown.

    Remove from skillet and set aside.

    Heat remaining 1 tablespoon oil in skillet and brown spaghetti (be careful, it browns fast!).

    Remove skillet from heat and return mushrooms and onions to skillet.

    Add remaining ingredients; mix well. Bring to a boil; reduce the heat to low.

    Cover and simmer 20 minutes or until liquid is absorbed. Freezes well.
