  • 17 lb. tomatoes, made into juice
  • 1 lb. onions, finely chopped
  • 1 medium green pepper, finely chopped
  • 2 stalks celery, finely chopped
  • 4 cloves garlic, minced
  • 1/4 c. salt
  • 3/4 c. sugar
  • 1/2 to 3/4 c. oil
  • 1 Tbsp. sweet basil
  • 1 Tbsp. oregano
  • 1 Tbsp. parsley
  • 1/8 tsp. cayenne pepper
  • 2 (12 oz.) cans tomato paste (not puree)

Directions

    Mix tomato juice and other ingredients.

    Cook down to blend spices and to thicken a little.

    Put into jars and process (hot water bath) for 10 minutes to seal jars.
