- 3 (14 oz.) cans diced tomatoes
- 2 (6 oz.) cans tomato paste
- 1 (8 oz.) can tomato sauce
- 1 medium onion (white or yellow)
- 5 cloves garlic
- 3/4 c. red or cooking wine
- 1/2 tsp. thyme
- 2 bay leaves, crushed
- 1/4 tsp. sage
- 1 Tbsp. oregano
- 1 c. water
- 1 Tbsp. soy sauce
- 1 lb. Polish or German sausage
- 1 lb. fresh mushrooms
- salt and pepper to taste
- sugar
- 1 lb. hamburger or deer meat
- 3 oz. Mozzarella cheese
Directions

1Place all tomatoes in a large cooking pot.

2Cut up onion and garlic; simmer in olive oil until they just begin to smell (be careful not to overcook these!).

3Place garlic and onion in cooking pot.

4Add next 10 ingredients (wine through salt and pepper) to cooking pot.

5With so many tomatoes, there will be an acid taste, so add just enough sugar to balance it out.

6Bring sauce to a quick boil for 5 minutes, stirring often.

7Lower the temperature; simmer for 1 to 2 hours.
