Spaghetti Squash Pie

  • 2 c. spaghetti squash (see following directions)
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 4 Tbsp. flour
  • 1 c. evaporated milk
  • 3/4 c. water
  • 3 egg yolks or 2 whole eggs
  • 2 Tbsp. coconut extract
  • 1 unbaked pie shell

Directions

    Microwave squash on high for 6 minutes per pound. Make sure there are several slits in the skin of the squash.

    After cooled, cut open and remove seeds. Throw away.

    Use a fork and remove the squash pulp.
