- 2 c. spaghetti squash (see following directions)
- 1/2 c. sugar
- 1/2 c. brown sugar
- 4 Tbsp. flour
- 1 c. evaporated milk
- 3/4 c. water
- 3 egg yolks or 2 whole eggs
- 2 Tbsp. coconut extract
- 1 unbaked pie shell
Directions

1Microwave squash on high for 6 minutes per pound. Make sure there are several slits in the skin of the squash.

2After cooled, cut open and remove seeds. Throw away.

3Use a fork and remove the squash pulp.
