Ingredients
- 1 spaghetti squash
- 1 12 cups fresh mushrooms, sliced
- 1 12 cups green onions, sliced
- 1 red peppers or 1 green pepper, finely chopped
- 1 (8 ounce) bottle creamy garlic dressing or 1 (8 ounce) bottle Italian dressing
- to taste lettuce leaf
- to taste cherry tomatoes
Directions

1Halve squash.

2Remove and discard seeds.

3Quarter to fit in a large pot.

4Add water to 1 inch.

5Bring to boil, cover, reduce to simmer and cook 20 to 30 minutes, or until tender.

6Remove and cool.

7Scrape squash pulp from rind to make 4 cups.

8Drain on paper towels to remove excess moisture.

9In large bowl, combine squash with mushrooms, onions, peppers and dressing.

10Mix and refrigerate.

11Serves 8.
