- 1 pkg. chicken thighs
- olive oil
- garlic
- oregano
- basil
- Italian seasoning
- hot pepper, crushed or fried
- tomato sauce
- linguini
- fresh Peccarino or Locatelli Romano cheese
- cracked pepper to taste
Directions

1Cover bottom of pan with olive oil.

2Skin thighs and brown in oil.

3Add copious amounts of garlic, basil and hot pepper.

4Add slightly less oregano and Italian seasoning.

5Just as the garlic starts to brown, add the tomato sauce (large can) and stir.

6Simmer lightly over low heat for 45 minutes.
