  • 2 Tbsp. vegetable oil
  • 1 large chopped onion
  • 1 green pepper
  • 1 stalk celery, chopped
  • 2 garlic cloves, minced
  • 1 lb. sausage (kielbasa)
  • 2 c. tomato sauce
  • salt and pepper
  • 3 c. cooked rice
  • 2 to 3 Tbsp. grated cheese

    oil in skillet; cook onions slowly for 5 minutes. Add pepper,

    celery and garlic; cook another minute.

    Stir in sausage chunks

    and saute, stirring now and then for another 5 minutes. Stir

    in tomato sauce; add salt and pepper to taste. Simmer sauce while

    you spread half the rice in the bottom of greased casserole; cover with sausage mixture, then top with the final layer

    Sprinkle grated cheese on top, if you wish. Bake in a preheated 350° oven for 20 to 25 minutes. Serve bubbling hot.
