- 1 pound cream cheese
- 1 1/2 cups sugar granulated
- 2 large eggs
- 1/2 teaspoon cinnamon
- 1 teaspoon lemon zest grated
- 1/4 cup flour, unbleached all-purpose
- 1/2 teaspoon salt
- 1 x powdered sugar
- 3 tablespoons butter
Directions

1Preheat the oven to 400F (200C).

2In a large mixing bowl, cream the cheese, 1 tablespoon of the butter and the sugar.

3Do not beat.

4Stir in the eggs, one at a time, beating well after each addition.

5Add the cinnamon, lemon rind, flour, and salt; blend well.

6Butter the pan with the remaining 2 tablespoons of butter, using your fingers to spread the butter completely.

7Pour the mixture into the prepared pan and bake for 12 minutes at 400F (200C)., then reduce the temperature to 350F (180C).

8and bake for another 25 to 30 minutes.

9The knife should come out clean.

10Cool the cake to room temperature, then sprinkle with confectioners' sugar.
