- 1 cup sugar plus more for caramelizing later
- 8 eggs separated
- 4 1/4 cups milk plus a splash of milk
- 1 cinnamon stick
- 1 lemon rind
- 1 vanilla bean
- 5 tablespoons cornstarch
Directions

1Cream together the sugar and egg yolks.

2In a saucepot, heat up the milk with the cinnamon stick, lemon rind, and vanilla bean.

3In a glass, mix the cornstarch with a splash of milk. Whisk until smooth then add to the hot milk.

4Stir the milk until thickened.

5Remove the solid items from the milk and whisk into the egg mixture.

6Pour batter into ramekins and refrigerate.

7Once cool, sprinkle the tops with sugar and caramelize it using a broiler or torch.
