- 1 large eggplant
- 1/2 c. onions, sliced thin
- 1/2 tsp. salt
- 1 1/2 c. fine bread crumbs
- 2 slices bacon, crumbled
- 1 1/2 c. tomatoes
- dash of red pepper
- 1/2 c. grated cheese
Directions

1Cut eggplant in pieces and cook in salted, boiling water until tender.

2Drain and mash.

3Place bacon in skillet; simmer until it starts to brown.

4Add onions and cook 15 minutes.

5Add tomatoes and seasonings.

6Cook 15 more minutes.

7Combine mixtures.

8Add crumbs and cheese in layers.

9Bake at 350° for 30 minutes.
