- 3 medium size potatoes
- 1 medium size onion
- 2 eggs
- 1 Tbsp. olive oil
- pepper and salt to taste
Directions

1Peel and thinly slice potatoes and onions.

2Heat oil in a nonstick pan.

3Add potatoes and cook on medium heat.

4After a few minutes, add the onions.

5Saute until potatoes are tender and onions are transparent.

6Add salt and pepper.

7Beat eggs in a bowl and then add them to the pan.

8Increase heat slightly.

9After a few minutes, turn omelette over and cook a few minutes longer.
