Spanish Pepper Chicken

  • 1 Tbsp. peppercorns
  • 1 1/2 c. pimento stuffed olives
  • 1 clove garlic
  • 1/2 tsp. grated lemon rind
  • 1/4 c. olive oil
  • 3 1/2 lb. chicken pieces

Directions

    Whirl peppercorns in blender container until crushed.

    Add olives, garlic, lemon rind and olive oil; blend until thick and fairly smooth.

    Spread olive mixture over chicken; place in shallow dish.

    Chill for 2 hours.

    Grill chicken on both sides for 30 to 40 minutes, or until tender.
