Date-Pecan Upside-Down Cake

- 1 1/2 c. butter or margarine
- 2/3 c. packed brown sugar
- 12 pitted dates
- 1/4 c. granulated sugar
- 1/4 c. milk
- 1 tsp. vanilla
- 1 egg
- 1 c. all-purpose flour
- 1/3 c. shortening
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- whipped cream
Directions

1Heat oven to 350°.

2Heat butter in a 10-inch ovenproof skillet or greased 9 x 9 x 2-inch pan in oven until melted.

3Sprinkle evenly with brown sugar. Arrange dates on top so that each serving will include one. Sprinkle with pecans.

4Beat remaining ingredients except whipped cream on low speed 30 seconds.

5Beat on high speed 3 minutes, scraping bowl occasionally.

6Pour evenly over dates and pecans.

7Bake 40 to 45 minutes or until wooden pick comes out clean.

8Loosen edges of cake with knife. Invert on heatproof platter.

9Leave skillet over cake a few minutes. Serve warm with whipped cream.
