  • 1 lb small red potato, quartered
  • 1 12 cups diced onions
  • 1 cup diced green pepper
  • 12 cup water
  • 1 tablespoon olive oil
  • 1 teaspoon chicken bouillon granule
  • 1 cup chopped tomato
  • 12 teaspoon dried oregano

Directions

    Place potatoes in a saucepan and cover with water.

    Bring to a boil, reduce heat, cover and cook until tender.

    In another pan, combine the onions, green pepper, water, oil and bouillon and bring to a boil.

    Reduce heat, cover and simmer until vegetables are tender.

    Drain potatoes and add onion mixture, tomatoes and oregano.

    Stir gently to coat.
