- 1 cup dry quinoa, rinsed, drained and patted dry
- 14 cup onion, chopped
- 2 cups vegetable broth
- 12 cup organic tomato sauce
- 2 teaspoons chili powder
- kosher salt
- pepper, to taste
Directions

1In a large saucepan over medium heat, add the quinoa and toast until the grains are slightly golden brown, about 4 to 5 minutes.

2Add onion, broth, tomato sauce and chili powder and bring to a boil.

3Cover and reduce the heat to low.

4Simmer for 20 minutes.

5Remove from the heat and fluff with a fork.

6Season with salt and pepper before serving.
