- 1 1/2 c. long cooking rice
- 2 Tbsp. cooking oil
- 1 small onion, finely chopped
- 1/2 medium bell pepper, finely chopped
- 1 medium tomato, chopped
- 3 c. water
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 Tbsp. garlic powder
- 1/2 c. medium salsa (optional)
Directions

1Heat oil over medium heat.

2Add rice and lightly brown.

3Add spices and vegetables.

4Cook over medium heat, stirring frequently until onion is translucent.

5Add water and salsa (if desired). Bring to a boil.

6Lower heat to low.

7Cover and simmer until all moisture is absorbed and rice is tender.

8Serves 4 to 6.
