- 1 c. long-grain rice
- 1 1/4 c. crushed tomatoes or tomato sauce
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 1/3 c. vegetable broth or water
- 1/2 c. chopped bell pepper
- 1 (4 oz.) can chopped green chilies
Directions

1Heat oil in a large saucepan over medium heat.

2Add rice and stir until coated with the oil.

3Blend tomatoes or tomato sauce, garlic, onion and 1/3 cup of broth or water in food processor or blender until smooth.
