- 6 slices bacon
- 1/4 c. chopped fine onions
- 1/4 c. chopped fine green pepper
- 3 c. cooked rice, rinsed and drained
- 1 (16 oz.) can tomatoes, chopped fine
- 1 1/2 tsp. salt or to desired taste
- black pepper to desired taste
Directions

1Cook bacon in skillet until crisp.

2Remove, drain, cool, then crumble.

3Pour out all grease drippings, reserve 2 teaspoons in the skillet.

4Add onions and pepper; cook until tender.

5Add the other ingredients and cook for 15 minutes on low heat.

6You can use your own canned tomatoes, if you have them.
