- 3 Tbsp. oil
- 1/2 small onion, diced
- 1/2 small bell pepper, diced
- 3 stalks celery, diced
- 2 Tbsp. chili powder
- 1 large can stewed tomatoes or Ro-Tel tomatoes
- 1/2 tsp. salt
- 1 1/2 c. water
Directions

1Brown rice, onion, pepper and celery in oil.

2Stir in chili powder and salt.

3Pour in can of tomatoes and water.

4Simmer 15 minutes.

5Turn on low heat until done.
