Spanish Rice

Ingredients

  • 1 c. uncooked rice
  • 1 can (10 3/4 oz.) tomato soup
  • 3 1/2 c. water
  • 1 onion, chopped
  • 1 (2 oz.) jar diced pimientos
  • 3 Tbsp. diced green pepper
  • 1 Tbsp. sugar
  • 1/4 stick margarine, melted
  • salt and pepper to taste
  • grated cheese

Directions

    Combine all ingredients except cheese; pour into baking dish. Bake at 400° for one hour.

    Remove from oven; top with cheese. Return to oven and allow cheese to brown.

    (I add one small can tomato paste for more taste.)

    Simple to make and is a very tasty dish.
