- 2 Tbsp. shortening
- 1 c. canned tomatoes and juice
- 2 c. water
- 1 c. uncooked rice
- 1/2 c. chopped onion
- 1 tsp. salt or to taste
- 1 can peas
Directions

1In heavy skillet over medium heat, add 2 tablespoons shortening.

2Add 1 cup uncooked rice and brown, stirring constantly until golden brown.

3Add chopped onion, tomatoes and juice, water and salt to taste or 1 teaspoon.

4Bring to a full boil; cover tightly.

5Turn down heat to simmer and cook slowly until rice has absorbed most of the water and is tender.

6Add 1 can of peas and heat through.

7Serves 8.
