  • 1/2 lb. bacon, chopped
  • 1/2 c. onion, chopped
  • 1/2 c. green pepper; chopped
  • 2 c. canned tomatoes
  • 6 c. cooked rice
  • 1 tsp. salt
  • 1/8 tsp. pepper

Directions

    Fry bacon until crisp; remove and add onion and green pepper. Cook slowly until onion is soft and yellow.

    Add remaining ingredients and bacon.

    Bake in 13 x 9-inch casserole at 350° for about 30 minutes.
