- 3 Tbsp. salad oil
- 1 clove garlic, minced
- 1 med. onion
- 1/4 c. chopped red or green pepper
- 3 c. boiled rice
- 1 tsp. salt
- 2 1/2 c. canned tomatoes
Directions

1Heat oil in a frying pan.

2Add onion, pepper, and garlic. Cook 2 to 3 minutes.

3Add tomatoes, salt and blend well.

4Stir in cooked rice.

5Cover pan and cook at low heat until tomato juices are absorbed (about 15 minutes).

6Serves 6.
