Spanish Rice

Ingredients

  • 1 c. rice
  • 3 Tbsp. oil
  • 1/2 c. chopped celery
  • 1/2 c. green pepper
  • 3/4 c. chopped onion
  • 1/4 c. bacon bits
  • 1 tsp. chili powder
  • 4 c. canned tomatoes or tomato sauce
  • 1 1/2 tsp. salt

Directions

    Saute rice in 2 tablespoons oil in skillet until lightly brown. Push to side of skillet.

    Saute chopped vegetables in 1 tablespoon of oil until tender.

    Add remaining ingredients and 1/2 cup hot water.

    Simmer covered for 30 minutes or until rice is tender, adding small amount of additional hot water if necessary. Let stand uncovered for several minutes before serving.

    Garnish with green pepper rings.
