- 1 c. rice
- 3 Tbsp. oil
- 1/2 c. chopped celery
- 1/2 c. green pepper
- 3/4 c. chopped onion
- 1/4 c. bacon bits
- 1 tsp. chili powder
- 4 c. canned tomatoes or tomato sauce
- 1 1/2 tsp. salt
Directions

1Saute rice in 2 tablespoons oil in skillet until lightly brown. Push to side of skillet.

2Saute chopped vegetables in 1 tablespoon of oil until tender.

3Add remaining ingredients and 1/2 cup hot water.

4Simmer covered for 30 minutes or until rice is tender, adding small amount of additional hot water if necessary. Let stand uncovered for several minutes before serving.

5Garnish with green pepper rings.
