- 2 1/2 c. cooked rice
- 2 Tbsp. butter
- 1 small onion, chopped
- 1/4 c. chopped green pepper
- 1/4 c. chopped celery
- 2 c. canned or cooked tomatoes
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. grated sharp cheese
Directions

1Heat 2 tablespoons butter in a skillet.

2Cook the onion, green pepper and celery for 5 minutes.

3Add the rice, tomatoes, salt and pepper.

4Bring to the boiling point.

5Simmer gently for 5 minutes. Add the cheese and serve at once.
