- 6 strips bacon
- 1 cup long grain white rice
- 10 ounces tomatoes
- 1 onion chopped fine
- 1 green pepper small, chopped fine
- 2 cloves garlic crushed
- 1 cup chicken broth
- 1/2 teaspoon chili powder
- 1 tablespoon butter
Directions

1Fry bacon in skillet until browned.

2Remove from skillet, crumble, and set aside.

3Do not remove bacon grease from skillet!

4Melt butter in skillet and add onion, pepper and garlic.

5Saute until onions are translucent.

6Add the tomatoes, green chiles and chicken broth and simmer approximately 5-10 minutes.

7Add the rice, cover and simmer approximately 20 -30 minutes.

8Crumble bacon on top and serve.

9Season with chili powder, salt, and pepper.
