- 2 teaspoons vegetable oil
- 12 medium white onion, chopped
- 1 garlic clove, minced
- 1 medium carrot, diced
- 1 cup long-grain rice
- 1 34 cups chicken stock
- 1 tablespoon tomato paste
- 1 teaspoon coarse salt
- 14 teaspoon fresh ground pepper
Directions

1Heat oil in a heavy pot over a moderate heat.

2Add onion, and cook until is starts to turn translucent.

3Add the garlic and carrot, and cook for about 2 minutes.

4Stir in the rice.

5Add chicken stock, tomato paste, salt, and pepper.

6Bring to the boil, stir once, and reduce the heat.

7Cover and simmer until all the water is absorbed.

8Take off the fire and allow the rice to stand covered for about 5 minutes.

9Serve warm.
