- 1 chopped big (whole) onion
- 2 to 3 chopped green bell peppers
- 2/3 c. rice
- 1 c. water
- 1 lb. (12 oz.) can crushed tomatoes
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 c. oil
Directions

1Fry onion and bell peppers in oil until tender.

2Cook over low to medium heat.

3Add tomatoes, water, onions, peppers, rice, salt and black pepper.

4Stir constantly until done.

5Serve with crumbled cornbread or cooked cabbage, if desired.
