Spanish Rice

Ingredients

  • 1/2 c. shortening
  • 2 medium onions
  • 1/2 tsp. black pepper
  • 1 tsp. comino (cumin)
  • 1 tsp. oregano
  • 1 tsp. chili powder (optional)
  • 1 c. dry rice (long grain)
  • 1 qt. canned tomatoes or juice
  • 1 qt. water, if needed

Directions

    In grease, cook onions, pepper, comino, oregano, salt and rice.

    Cook until begins to brown. Add tomatoes and water.

    Cook slowly about 40 minutes.

    When served, add a small amount of hot sauce to each serving.

    (Let each do their own.)

    Serve with Japanese Chicken.
