- 2 c. cooked brown rice
- 1/2 can tomato puree
- 2 bay leaves
- 1 green pepper, chopped finely
- 1 chili pepper, chopped finely
- 1 stalk celery, chopped finely
- 1 onion, chopped finely
- 1 Tbsp. olive oil
- 3 to 4 cloves garlic, minced
- 1 tsp. each: cumin, coriander and oregano
- salt and pepper to taste
- minced fresh cilantro or parsley
Directions

1In large skillet, saute onion in oil until soft.

2Add garlic, peppers, celery, bay leaves, spices, salt and pepper.

3Saute 3 to 4 minutes.

4Add tomato puree and rice.

5Cover and cook over low heat until warmed through.
