  • 10 None large shrimp, peeled and deveined, tails intact
  • 5 None button mushrooms, halved
  • 1/3 cup olive oil
  • 4 cloves garlic, crushed
  • 1 None red pepper, seeded and cubed
  • 1 medium red onion, cut into 3/4-inch pieces
  • 1 None chorizo sausage, sliced
  • 10 None bamboo skewers, soaked
  • None None Arugula, to serve

Directions

    Preheat the grill on medium-high heat.

    Place shrimp in a bowl with mushrooms, oil and garlic. Season to taste and toss well. Let stand for 10 mins.

    Thread shrimp, vegetables and chorizo onto skewers. Grill for 2-3 mins, each side, until the shrimp change color and the vegetables are tender. Serve with arugula.
