- 4 lb. round steak, cut 2-inches thick
- 2 to 3 carrots, diced
- 1 Mexican pepper, chopped
- flour, salt and pepper
- 1 green pepper, chopped
- 1 to 2 onions, diced
- 1 to 2 canned pimientos, chopped
- 2 c. tomatoes
- 1/2 c. cooking fat
Directions

1Rub meat with salt and pepper.

2Pound all the flour possible into the steaks.

3Sear in hot fat.

4Add remaining ingredients. Cover.

5Simmer slowly about 3 hours, or until meat is tender.

6If desired, peas, celery, celery salt, spice and 1/2 cup finely diced salt pork may be added to give variety in flavor.

7Makes 12 servings.
