Sparkling "Mimosas"

  • 1-1/2 cups boiling water
  • 1 pkg. (6 oz.) JELL-O Orange Flavor Gelatin
  • 2-1/2 cups cold seltzer
  • 1 can (11 oz.) DOLE Mandarin Oranges, drained

    Add boiling water to gelatin mix in large bowl; stir 2 min.

    until completely dissolved.

    Stir in seltzer.

    Refrigerate 40 to 45 min.

    or until thickened but not set.

    Reserve 1 cup gelatin; place in medium bowl.

    Set aside.

    Stir oranges into remaining gelatin; spoon into 8 champagne glasses.

    Beat reserved gelatin with mixer on high speed until doubled in volume; spoon over gelatin in glasses.

    Refrigerate 3 hours or until firm.
