- 3 1/3 c. unbleached pastry flour
- 3 large eggs
- pinch of salt
- 22 oz. milk or water
Directions

1Heat a large pot of water to a boil.

2Put flour in a large bowl.

3Make a well in flour center and add beaten eggs.

4Slowly whisk in the liquid, carefully avoiding lumps.

5Press dough through a colander or sieve bottom into the boiling water quickly or shred dough into water off a dish.

6Dough should be more liquid-like than firm and tricky to control.

7Boil 5 minutes or until all rise to pot surface.

8With slotted spoon, transfer spatzle to warm serving platter.

9Top with chicken.

10Serve with sauce on side.

11Serve immediately.
