- 1 pkg. yeast
- 2 1/4 tsp. salt
- 3 1/2 c. unbleached flour
- 1 1/4 c. water + 1/3 c. lukewarm
Directions

1Mix yeast in 1/3 water.

2Mix flour and salt; put in large bowl.

3Add 1 1/4 cups water to yeast.

4Add all of it to flour and salt.

5Mix well; turn out on floured surface.

6Knead until elastic.

7Let rise in bowl until 3 times its size (4 to 5 hours). Pat down, fold and turn and let rise again 1 1/2 hours.

8Shape in 3-inch balls.

9Let rise until 2 1/2 times original size (2 to 2 1/2 hours).

10Bake at 450° for 10 minutes.
