Spiced Blueberry Jam

  • 8 c. blueberries
  • 3/4 c. apple juice
  • 1/3 c. lemon juice
  • 1 c. honey
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves

Directions

    Combine blueberries, apple juice and lemon juice in an 8-quart stainless steel or enamel saucepan.

    Place over high heat; stir until mixture comes to a boil.

    Add honey, cinnamon and cloves. Continue stirring.

    When mixture comes to a full boil again, begin timing for approximately 20 to 30 minutes.

    Jam is ready when it is thick, jam like and sticks slightly to the bottom of the pan. Pour into hot, scalded half-pint jars, leaving 1/4-inch headspace. Seal.

    Process in a simmering water bath for 10 minutes.

    Makes 4 half pints.
