- 4 lb. carrots
- 1 qt. white vinegar
- 5 jalapeno peppers
- 1/2 tsp. olive oil
Directions

1Prepare carrots and slice into 1/2-inch thick round slices. Heat vinegar, olive oil and peppers.

2Put carrots in strainer and place in boiling vinegar 10 seconds.

3Pack carrots in pint jars. Strain vinegar.

4Pour over carrots and seal.
