  • 1 c. peeled, diced jicama
  • 2 oranges, peeled and cut into 1/2-inch pieces
  • 2 c. fresh pineapple chunks (1/2-inch chunks)
  • 1/2 c. orange juice
  • 1/4 c. confectioners sugar
  • 1/4 tsp. ground cinnamon
  • 2 bananas

Directions

    In a mixing bowl, combine jicama, oranges, pineapple, orange juice, confectioners sugar and cinnamon.

    Refrigerate one hour, stirring occasionally.

    When ready to serve, peel bananas and slice them into the salad; stir gently to mix.
