  • 4 None pears, peeled, cored, cut into chunks
  • 1 bunch rhubarb, trimmed, washed, and cut into 1 1/2 inch pieces
  • 1/3 cup sugar
  • 1 None grapefruit, peeled, sliced, seeded
  • 1/3 cup butter, chopped, at room temperature
  • 1/4 cup brown sugar
  • 8 None ginger snap cookies, crushed
  • 1/2 cup self-rising flour, sifted
  • 1 oz pecans, chopped
  • None None Warm custard, to serve
  • None None Ice cream, to serve

Directions

    Preheat oven to 350°F. Lightly grease six 1/2 cup ramekins (or a large casserole dish). Combine pears and 2 tbsp water in a medium saucepan. Bring to a boil on high. Reduce heat and simmer, covered, for 4-5 mins until just tender.

    Add rhubarb and sugar. Simmer, covered, for 2-3 mins, until rhubarb is tender. Stir in grapefruit. Cook for 1-2 mins until warmed through. Spoon mixture into ramekins.

    To make crumble: Cream butter and brown sugar together in a small bowl, using an electric mixer, until pale. Fold in crushed cookies, flour and pecans. Sprinkle over fruit. Bake for 15-20 mins until golden. Serve warm with custard and ice cream.
