Spiced Fruit Salad

Ingredients

  • 1/4 cup sugar
  • 1 None vanilla pod, seeds scraped out
  • 1/2 oz ginger, peeled and chopped finely
  • 1 None orange, zested, peeled and sliced thinly
  • 1 stick cinnamon
  • 2 None star anise pods
  • 6 None cloves
  • 1 tbsp honey
  • 1 None mango, peeled and cut into thin slices
  • 2 None kiwis, peeled and cut into thin slices
  • 1 None star fruit, peeled and cut into thin slices
  • 1/4 None pineapple, peeled and cut into thin slices
  • 1 oz dried cranberries

Directions

    Place the sugar, 1 cup water, vanilla seeds, ginger, orange zest, cinnamon, star anise and cloves in a saucepan. Bring to a boil and simmer for 5 mins until thickened. Remove from the heat and stir in the honey. Strain through a sieve and discard the spices.

    Mix the fruit together in a bowl, stir in the syrup and chill in the refrigerator for 1 hour before serving.
