Spiced Ginger Date Cake

- 1 cup pitted dates
- 2 cups ground almonds
- 1/4 cup honey
- 5 None eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground nutmeg
- 1 tsp ground cinnamon
- 1 cup pecans, for decorating
Directions

1Soak dates in water for 2 hours. Drain well.

2Preheat the oven to 300°F. Grease an 8-inch round cake pan with butter; line the bottom with parchment baking paper.

3Put the dates, almonds, honey, eggs, vanilla, baking soda and spices into a food processor. Process until smooth. Pour the mixture into the prepared pan. Decorate with the pecans.

4Bake for 45 mins or until a skewer inserted into center comes out clean. Cool cake in the pan on a wire rack.
