Spiced Ginger Date Cake

  • 1 cup pitted dates
  • 2 cups ground almonds
  • 1/4 cup honey
  • 5 None eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 cup pecans, for decorating

    Soak dates in water for 2 hours. Drain well.

    Preheat the oven to 300°F. Grease an 8-inch round cake pan with butter; line the bottom with parchment baking paper.

    Put the dates, almonds, honey, eggs, vanilla, baking soda and spices into a food processor. Process until smooth. Pour the mixture into the prepared pan. Decorate with the pecans.

    Bake for 45 mins or until a skewer inserted into center comes out clean. Cool cake in the pan on a wire rack.
