- 2 c. all-purpose flour
- 4 tsp. baking powder
- 1 Tbsp. pumpkin pie spice
- 1 tsp. salt
- 1 c. butter or oleo, softened
- 1 c. brown sugar
- 2 eggs
- 2 tsp. vanilla
- 1 1/2 c. cooked squash
- 4 c. rolled oats
- 1 c. dark raisins
Directions

1Preheat oven to 350°.

2Coat baking sheets with nonstick cooking spray.

3In small bowl, combine flour, baking powder, pumpkin pie spice and salt.

4In mixing bowl with electric mixer at high, beat butter and brown sugar until creamy.

5Add eggs and vanilla; beat 1 minute.

6Stir in squash.

7Gradually stir in flour mixture, oats and raisins until combined.

8Drop dough by 1/4 cupfuls onto baking sheets.

9Bake 15 to 18 minutes until lightly golden.

10Remove to wire racks.

11Cool for 1 hour.

12Repeat with the remaining dough. Makes about 3 dozen cookies.
