- 2 1/4 pounds parsnips
- 4 tablespoons olive oil
- 1 tablespoon ground coriander or better, if available, crushed coriander seeds
- 1/2 tablespoon cumin
- 1/2 tablespoon ras el hanout
- 2 tablespoons honey
- sea salt
- ground black pepper
Directions

1Preheat oven to 425 degrees Fahrenheit.

2Peel the parsnips and cut into chips. Saute in a little olive oil.

3In a bowl, mix the coriander, cumin, Ras El Hanout, olive oil, and honey.

4Add the fried parsnips and coat with the sauce.

5Arrange on a baking sheet and cook for 20 minutes, turning once or twice.

6Salt and pepper after cooking.
