  • 2 1/4 pounds parsnips
  • 4 tablespoons olive oil
  • 1 tablespoon ground coriander or better, if available, crushed coriander seeds
  • 1/2 tablespoon cumin
  • 1/2 tablespoon ras el hanout
  • 2 tablespoons honey
  • sea salt
  • ground black pepper

    Preheat oven to 425 degrees Fahrenheit.

    Peel the parsnips and cut into chips. Saute in a little olive oil.

    In a bowl, mix the coriander, cumin, Ras El Hanout, olive oil, and honey.

    Add the fried parsnips and coat with the sauce.

    Arrange on a baking sheet and cook for 20 minutes, turning once or twice.
