- 2 cups cooked rice
- 2 12 cups nonfat milk
- 12 teaspoon almond extract
- 1 teaspoon vanilla extract
- 14 teaspoon ground cardamom
- 14 teaspoon ground cinnamon
- 1 pinch salt
- 16 (1 g) packets Equal sugar substitute
Directions

1Combine rice, milk, salt and spices in a saucepan.

2Heat at medium until just barely boiling.

3Simmer 3 minutes.

4Remove from heat and add extracts and Equal.

5Cool to room temperature.

6Transfer to servingware.

7Place a layer of plastic wrap in contact with the surface of the pudding to prevent a skin from forming.

8Cover tightly and refrigerate.
